Espelette Mash
All the usage of the Espelette powder / pepper. Add also to the mustard, with grill meats, with pasta, rice, mashed potatoes, eggs, in sandwiches. Espelette red pepper mash can be used as a spicy ketchup. It can replace the mustard when you make a mayonnaise, it is then called a Bayonnaise ( from Bayonne in the South West) . You can mix it with cream cheese or even yoghourt. As a seasoning with cold or warm meats, fishes or roasted meats. Locals are using it also to rub their dry cured ham of the local Basque or Pyrenée cheese made with Ewes;
