All the usage of the Espelette powder / pepper.  Add also to the mustard, with grill meats, with pasta, rice, mashed potatoes, eggs, in sandwiches. Espelette red pepper mash can be used as a spicy ketchup. It can replace the mustard when you make a mayonnaise, it is then called a Bayonnaise ( from Bayonne in the South West) . You can mix it with cream cheese or even yoghourt. As a seasoning with cold or warm meats, fishes or roasted meats. Locals are using it also to rub their dry cured ham of the local Basque or PyrenĂ©e cheese made with Ewes;
