ORGANIC WHEAT LEVAIN


Using the levain (leaven) : According to the different leaven, the right proportion to use is about 21 gr / 500 gr of flour (salt is ab 20 gr / kg of flour ) . Mix with 350 ml of warm water and work by hand (or a robot chef during 5 minutes) and let it rest 30 minute once kneaded.

"Knock it down" once and rise again before baking. You can use all our Levain in Bread machine instead of the yeast.
