Spelt (Triticum Spelta) is an ancient, rustic variety of wheat and was the Roman’s staple cereal. It contains more protein and minerals than wheat. - Preparation: Soak for a few hours and cook the Spelt like brown rice, i.e. about 45 min. in 3 parts boiling salted water.
