It
is interesting to know about flour quality indication :
the « type » gives the flouri ts ash
rate compared to it's dry material.
For
example, the 110 type indicates that the flour contains from
1.0 to 1.2% ash. The higher the number the more
the flour is whole. Minerals just like Vitamins are mainly
situated at the wheat grain periphery and are therefore eliminated
in the more refined flours
