The amino acids that make up the protein in legumes and cereals are highly complementary, which is why it is a good idea to combine them to take advantage of what each provides (2/3 cereals per 1/3 legumes). White Haricot Beans “Lingots” are very popular for their thin skin and smooth taste.
How to use:Soak overnight, rinse and cook on a slow heat in a large amount of cold water for 1h30. Add salt when cooked. To be easily digestible, you could add to cooking water some cumin seeds, aniseeds or fennel seeds. Cooking tip : You could use “Lingots” to make mixed salads, soups or croquettes.
